Brownie Babka

My family loves brownie babka, and it is always gone within a few hours of completing it.

110 ML Whole Milk
30 Grams White Sugar
2 Eggs
105 Grams Butter - Room temp
300 Grams Flour
10 Grams Salt
100 Grams Sourdough Starter

Instructions

Place all your ingredients in the kitchen aid and put it on low setting for 3-6 minutes until it is completely smooth and easily slips off the hook.
Allow the dough to rest for 1 hour in a bowl. Then do your first round of stretch and fold and then let the dough rest again for another 30 minutes and do another round of stretch and fold.
After completing 2 round of stretch and folds. Cover your dough and let it rest in room temp for 2 hours, or until it is looking visibly puffy. Then let it rest in the fridge overnight or for a minimum of 6 hours.
The next day you will make your favorite Brownie recipe and add dark chocolate chip. Take your dough out of the fridge and use a rolling pin to roll it out. Look at the shape and size of your bread pan and keep that in mind while rolling so that you will not struggle with placing it in the bread pan.
Gently spread your brownie mix over the dough but leave the edge alone. Then roll the dough over into a swirl. Use a knife or scissors to cut the rolled dough in half. It might be sticky and messy. Sprinkle a little flour if you need to. Twist the two around each other. And transfer to your coated bread pan. Let it keep rising for at least an hour, maybe longer (use your judgment here) while your oven is preheating to 370F.
Bake for 20 minutes at 370 covered and an additional 15 uncovered.

Notes

I used Robin Hood bread flour for this recipe, but AP is also going to work.

Because this recipe uses brownie it might get sticky and messy during the twisting/braiding process but it will still turn out fine. You can spread the dough more thin if you would like, I did mine rather thick and I liked having large uneven chunks of brownie throughout the babka, it provided a nice pattern, but if you are looking for a more even spread feel free to do so.
